Iranian Spring Festival






As said kashan and prudent center of a particular type of drink, which is called Aragh, refers generically to a series of aromatic liquids that are produced by distillation of herbs and seeds, such as mint or anise. But also there is a particular Aragh called Golab (derived from the Persian goal (rose) ab (water)) and is used to foods, sweets, drinks like a drink (made with water, sugar or honey), also for to make perfume, put on face for beauty and even sacred places wash with Golab.



In Ordibehesht, coinciding in May and June, an annual Rose and Rose Water festival will be held in Kashan, Iran. This is the time to collect the Mohammadi roses to get rose water out of them. The season for the collection and preparation of pink water roses is from April 21st to May 21st. In early May, the rose scent extends over different areas of Kashan, such as Qamsar Joshqan Qali, Barzak and Niasar.


The ceremony to make rose water in Kashan attracts many tourists. Every day, around 80,000 people from various cities come to Kashan for this traditional ceremony. The arrival of tourists in the Kashan districts has a positive impact on the region's economy. Rose water is made from a very sweet type of rose smell and is used in various traditional dishes and desserts. It is also used as a fragrance among Muslims. Although, some modern mechanized factories are built, but still a large part of this, let the industry say, is traditionally done. And this traditional rose water production that is established in homes or gardens attracts tourists to Kashan. Kashan's historical monuments and architectures add to the popularity of this festival too. The production of rose water in Iran dates back over 2500 years ago. There were distillation apparatus containing large copper pots with special tubes to obtain herbs and special brick oven made from bricks. The machines were used to produce rose water and other herbal hydrosols for commercial purposes.





Before the distillation starts people pick up Mohammadi roses and collect their petals to place in the copper pots. Then the jars are placed in the oven based on bricks or stones and mud. Almost every 30 kg of rose petals pour into the pot containing 80 liters of water. The dish is then steamed with water and rose. The vessels are made of iron or aluminum tubes for steam moving through to obtain hydrosols. The end of the process and Golab - rose water - is ready. Golab has antiviral and antibacterial, antispasmodic, antiseptic and sedative is. Rose secretion scent of endorphins in the brain of balance and comfort of the person. The resulting water to wash the holy places, confectionery, jams and oil used in the food and pharmaceutical industries.
